Have yourself a merry little tropical Christmas! Coconut is not really the first ingredient you associate with the holidays but it’s nice to switch from the more traditional flavors every now and then. These coconut kisses are super easy and quick to whip up, perfect for when you don’t have a lot of time to spare. We all know how busy the holidays can get!
An added bonus of these macaroons is that they are gluten free, to please any guest with an allergy. They’re chewy, coconutty and delicious. A perfect fit for any christmas cookie platter! Dip in chocolate to make them extra luxury 🙂
Coconut Macaroon Kisses Recipe

- Preheat the oven to 175C/350F. Line a baking sheet with parchment paper or a silpat mat.
- Melt the butter. Set aside to cool. Lightly whisk together the eggs and sugar. Then add the coconut, salt, cooled butter and salt and fold it in until combined. Let it sit for about 15 minutes.
- With a tablespoon, spoon portions of batter onto the baking sheet, shape them into peaks/kisses. Bake for 10-12 minutes. Remove from the oven, let cool. Store in an airtight container.
